To be safe, do it at your main water valve AND at the meter using a water meter key.

The problem is the fittings for pex are brass which isn't compatible with the galvanized pipe, but I have doubts about using dielectric fittings after reading some opinions online.

You can have saved yourself a lot of elbow grease, its a penetrating and liberating oil that eats threw rusted stuck pipes (bolts , etc) a pair of angled adjustable vice grips would have done wonders too. So far no corrosion but we will keep a close eye on it. Ah omg thats awesome!
